CHERRYGAL APPLE PECAN MUFFINS: This is an easy-to-make muffin that is bursting with natural goodness! PREHEAT OVEN 375 degrees. (1) CREAM TOGETHER: 1/4 C + 2 T butter, 2/3 C white sugar, 1/3 C brown sugar, 1/3 C raw honey, 1 t Nielsen-Massey Madagascar Bourbon vanilla extract, 1/2 t salt, 2 eggs (you may also add cinnamon or nutmeg but only lightly so the spice doesn't overwhelm the other delicate flavors). When smooth and gooey, (2) ADD slowly in this order 1 C white flour with 2 T baking powder, 1/2 C skim milk, 2/3 C whole wheat flour. When batter is well-mixed (3) FOLD IN 1 peeled cored chopped apple (I prefer a juicy but tart apple like Gala) and 1/2 cup broken CherryGal Pecans (or other nutmeat such as walnuts). (4) LIGHTLY GREASE or butter your muffin tin. This recipe will FILL 6-CUP LARGE SIZED MUFFIN TIN or 1 12-cup smaller tin (I recommend the larger muffins). (5) BAKE 30 minutes or until done. (smaller muffins will need less time). (6) COOL on wire rack before turning out. Delicious warm from the oven or can be frozen (wrap in waxed paper before you ziplock) and reheated for 1 minute in microwave.
