CRAPAUDINE BEET (Beta vulgaris) is an ancient French mangel dating back a thousand years that recently has caught the attention of high end chefs. The reason is the beet's exceptional flavor. Nothing to look at, it has dark bark-like skin. But roast it for an hour and slip off that ugly exterior and you have perhaps the most delicious of brilliant red beet and, the longer you store it, the sweeter it gets! Whether using in savory dishes, or in sweet, you cannot go wrong with this rare and incredible beet! The name roughly translates to "lady toad."
