THYME (Thymus vulgaris), also known as French Thyme, is one of the most versatile culinary herbs in your kitchen garden. It can be used for any meat, vegetable, or cheese, but is most popular in stews and certain mediterranean dishes. Perennial and evergreen, this sprawling 12"H shrub is gray-green and fragrant, with a sweeter taste than English thyme. As with all Mediterranean herbs, grow it "high and dry" with a well-draining sweet soil that has been amended with a little garden lime if necessary and some sand ("dry") to achieve a pH of 6-7. Does best in containers or raised beds ("high"). Harvest on a regular basis to keep it lush. Pretty lavender blooms in Spring. MEDICINAL USES: Folk lore said that thyme provided a home for garden fairies, so it was always included in cottage gardens for this reason. Used for centuries as a powerful expectorant. Brew the pounded leaves and serve as a tea or gargle for sore throats. Boost this effect by adding sage as well. It helps to boost the immune system because of its antiseptic qualities. And is used to preserve meats and other foods.(It was one of the herbs used by ancient Egyptians in their embalming process!) One note, if pregnant, limit your use to occasional culinary dishes and skip the teas or other infusions.
