HEALTH BENEFITS: Why grow celery, when it is so inexpensive at the grocers? Well, one reason is that USDA tests have found more than 60 different pesticides on commercially-grown celery (as opposed to organic). And, I was researching foods to help my aging knees and celery came out on top! It reduces inflammation, so if you are suffering from joint pains (and also lung infections, asthma, or acne), eating more celery will bring much-needed relief. GROWING TIPS: Sow in winter in a flat and cover lightly with fine growing medium. Germination takes up to 21 days, so be patient and keep the flat moist, not wet. When seedlings emerge and get about an inch high, prick out and pot up in small pots. Gradually harden off and transplant in mid spring. Keep well-watered for the remainder of the time. If you want the full red color, do not trench to blanch. When ready, you can harvest the outer stalks by carefully cutting away and let the remainder continue growing. Or harvest entire plant by cutting at the ground level.
